Happy Memorial Day weekend! Here is a recipe for you to try while entertaining this holiday weekend! On the west side of the mountain’s, it’s gonna be nice! Perfect grilling weather.
4 pieces of halibut…. skinned about 6-8 oz each
Marinate for a few hours in:
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon Lemon Juice
- 1 tablespoon dill weed
- 1 tablespoon lemon pepper
- 1 teaspoon minced garlic
- “Some” kosher salt
- “Some” freshly ground black pepper
Place a slice of lemon on each piece of halibut.
Wrap each halibut piece in a slice or two of bacon.
Place in fish grilling basket if possible… Or spear with toothpicks.
Cook on the outdoor grill on medium direct heat for about 20 minutes… until 135 degrees internal fish temperature, usually 10 minutes on each side.
